What horrendous weather we are having in Princeton today. Found a friend’s recipe and I think today is the day to make these with the little Scoops after school. (Thanks to Amy Senftleben for sharing)
Oatmeal Chocolate Chip Cookies
1 cup butter1 cup packed brown sugar 1/2 cup granulated sugar 1 tsp vanilla 2 eggs 2 cups unbleached all purpose flour 1/2 tsp salt 2 tsp baking powder 2 cups old fashioned oats 2 cups chocolate chips Preheat oven to 350. In large bowl, cream butter and sugar together until light and fluffy. Mix in eggs and vanilla. Sift together flour, baking powder and salt. Add to creamed mixture, blend thoroughly. Stir in oats and chips. I use a small ice cream scooper/mellon baller that is 1.75″ in diameter to scoop out each cookie portion. Bake on ungreased cookie sheets for 10-12 min (10 is perfect in our oven, they actually don’t look “done” but cool to perfection). Cool on racks. Makes 3 dozen.
