Muffins, generally an excuse to eat a big fat cupcake for breakfast. We’ve tried the healthy recipes for banana bread with yogurt or applesauce instead of butter. Doesn’t cut it over here. So here is our easy-peasy, somewhat healthful, exceptionally delicious recipe for Banana Muffins or bread if you choose a loaf pan to bake it in. Please note you can add up to 3/4 cup of things like chocolate chips, pecans, dried fruit etc. but we like ours without.
- 3 to 4 ripe bananas
- 1/4 cup melted butter
- 3/4 tablespoon pure vanilla extract
- 1 cup sugar
- 1 1/3 cups flour (the 50/50 whole white what blend from Hodgson is our pick)
- 1/4 cup ground flaxseed
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 teaspoon baking soda
Heat oven to 350. Mash all bananas and then mix in all other ingredients by hand until smooth.
We chose mini-muffins and greased the pan with Spectrum Brand Canola Oil Baking Spray with Flour. Baked for 12-15 minutes and then eaten rapidly with hot coffee. (Try 45 for a loaf pan and give it the toothpick test) It was a glourious morning indeed.
